Breaded Chicken With Potato Salad

Breaded Chicken Recipe & Potato Salad Meal :

 

1 – 3 Chicken Breast=

2- 3 Eggs

3- 1 Cup of milk or more

4- 1 or 2 cups of Breadcrumbs

5- 1/2 Cup Parmesan cheese

6- a pinch of Salt and Pepper

Pound the chicken breasts until they are an even thickness

In a small bowl, mix together the breadcrumbs and the Parmesan Cheese then transfer to a plate or shallow bowl.

Place seasoned bread crumbs into a second shallow bowl.  Beat eggs and milk in a third shallow bowl and season with salt and pepper.

Dip the breaded chicken back into the egg and coat with  mixture.

You should use low point oils like light  Olive Oil, Vegetable and or  Sunflower Oil

Pour the oil into a large heavy skillet to about ¼ inch deep and heat over medium-high heat.  Add the chicken. cook the chicken without turning until golden brown.

Transfer the cutlets to a paper towel-lined plate

 

Potato Salad:

1- 4 Medium Potato

2 – Olive Oil

3 – Wine vinegar  red or Apple vinegar  one medium red onion

4- Salt to taste.

Very simple A pot to boil the potatoes after cooked peel the potatoes and cut them in chunks or if you   want in quarters and the red onion chopped or sliced in the bowl

Then add your extra Virgin Olive vinegar salt mix to taste.
