Anna’s Manicotti recipe From the old City of Torre Annunziata:


20 Large Manicotti

6   Cups of Ricotta cheese

10  Cups of  Shredded Mozzarella cheese

8    Tablespoons of chopped Basil

2    26-ounces prepared spaghetti meat sauce

1     cup of romano mix with parmesan cheese

Pre Cook Manicotti to a boil with a spoon of olive oil then drain them in a colander with cold water

Mix  Mozzarella with ricotta and basil together

Use a spoon or a cake filler  to stuff  the pasta with cheese mixture


Preheat oven at 350 F  make sure you spray a non stick spray or a base of sauce .

fill the pan one layer at the time each with sauce and a sprinkle of mozzarella

Pour the remaining sauce and mozzarella over the Manicotti
